Broccoli and Bacon Salad

This is one of my favorite salads, it’s crunchy, sweet, and the real bonus?… filled with bacon!! This is a perfect and easy salad to make and bring to potlucks also.

1/2 cup mayo
2 TBSP sugar
2 TBSP white vinegar
12-oz of broccoli, chopped
1 small red onion, finely diced
1/4 cup craisins
1/4 cup sunflower seeds
8 slices of bacon, cooked til crisp and crumbled

Whisk the first 3 ingredients in a large bowl, toss in everything else and stir til well coated, cover and refrigerate for 2-3 hours for all the flavors to blend together. Enjoy:)

Wonton Chicken Salad

This is one of my kiddos favorite salad…..it’s easy to throw together and I leave the dressing and wontons on the side for them to assemble after school. It makes a large salad, but if you don’t add the dressing, it will last a few days in the fridge for an after school snack!

So….it’s a salad….chop all these up and throw in a large bowl!  Not too difficult;)

1 8 oz can water chestnuts, drained and finely chopped

1 15 oz can mandarin oranges, drained

1/2 bunch green onions chopped (about 3)

1 head red leaf lettuce, chopped

1 head romaine lettuce, chopped

1/2 head of iceberg, chopped

3 large boneless, skinless chicken breasts, cooked or grilled and chopped or shredded, if that’s the way you prefer it ( I like to marinate mine in the dressing overnight, then throw on the grill) aka, I double the dressing when making a batch:)

1/2 cup shredded mozzarella, I’ve used Monterey Jack also.

1 package of wonton strips (usually found near the croutons)

1/2 cup chopped cashews

Dressing:

1/2 cup sugar

1/3 cup canola oil

1/4 cup rice vinegar

1 tsp salt

3/4 tsp ground white pepper

2 tsp soy sauce

2 TBSP toasted sesame seeds
Whisk the first 3 ingredients together, and then add all the rest of them…..whisk well and store in the fridge until ready to use.  Whisk right before serving:)

 

Chicken Salad Sandwiches

3 cups chicken, cooked and diced
1 cup finely diced celery
2 TBSP chopped fresh parsley or 1TBSP dried parsley
1 tsp garlic salt
1 tsp pepper
1 cup miracle whip
2 Tbl lemon juice
1/2 cup sliced almonds
1/4 cup whipping cream, whipped stiff

1 cup of seedless grapes, halved….if grapes float your boat…..I don’t add them, but everyone is different;)

Combine everything and gently fold in whipping cream! Makes about 24 mini-croissants!( I’m not a miracle whip person, but for some reason it has to be miracle whip, it tastes great with it!)

Grandma Ruth’s Salad

You know how there’s dishes…that have been served at any and all family get-togethers?? Well…this is one of those….that has always been served at Thanksgiving….Christmas…Easter….any major holiday that included my side of the family….My siblings will agree (probably)…that this is the strangest of most of them…..except for that dang green jello dish, that one takes the blue ribbon of weirdness!!!

1 head cauliflower, chopped up
1 head iceburg lettuce, chopped up
2 cups mayo (I know…..stay with me)
3/4 cup bacon, cooked and chopped (hello?  bacon makes everything tasty)
1/3 cup sugar (yes….Grandma liked sugar)
1/3 cup grated parm cheese

Now…everything is prepped…..In a large bowl, layer in that order.  Cover with plastic wrap and refrigerate overnight.  Next day…..toss right before serving.

This makes a super large salad…..so of course feel free to half all the ingredients…I’ve always loved this salad, as weird as it is….but then again…I love raw cauliflower too…. Now, onto the green jello recipe…..;)
